Penne With Blue Cheese And Tomatoes - cooking recipe

6 None tomatoes, halved
1 tbsp olive oil
10.5 oz penne pasta
4.5 oz blue cheese, crumbled
4.5 oz cream cheese, softened
3 oz Parmesan cheese, grated
7 oz baby spinach
Preparation

Preheat broiler. Arrange tomatoes, cut-side up, on a grill pan and drizzle with oil. Broil for 10 mins, or until soft and charred in places. Remove from heat and cover to keep warm.
Meanwhile, cook pasta in boiling salted water until al dente. Drain. Toss with blue cheese, cream cheese, 1.5 oz Parmesan and spinach. Transfer to a shallow baking dish and sprinkle with remaining Parmesan. Broil until top is golden brown. Serve with charred tomatoes.
