Broiled Burgers With Curry Sauce - cooking recipe

4 tbsp plain yogurt
2 tbsp reduced-fat mayonnaise
1/2 tsp curry powder
1 tbsp orange juice
300 g beef steak mince
1 small onion, peeled and finely chopped
1 tbsp ketchup
1 None egg yolk
3 None burger buns
1 large tomato, sliced
large handful rocket
4 cm cucumber, sliced
50 g pickled shredded cabbage
Preparation

To make the sauce, place the yogurt in a bowl with mayonnaise, curry powder and orange juice. Mix well until combined. Season to taste with salt and freshly ground black pepper, chill.
To make the burgers, pllace the ground beef in a large bowl with the onion, ketchup, and egg yolk. Season with salt and freshly ground black pepper. Mix with a wooden spoon, then knead to combine. Shape into 3 patties.
Preheat the broiler to medium-high, place the burgers under the broiler for 8-10 mins, turning occasionally, until cooked through.
Place the buns cut-side-up under the broiler, and toast briefly until golden.
Top the buns with the curry sauce, tomatoes, arugula, beef patties, cucumber and pickled shredded cabbage.
