Prosciutto Pork With Roasted Potatoes - cooking recipe

Ingredients
    1 3/4 lbs potatoes, peeled and halved, larger ones quartered
    2 tbsp oil
    4 None boneless pork chops
    4 tbsp pesto
    4 slices prosciutto
    None None Basil leaves, to garnish
    None None Arugula salad, to serve
Preparation
    Preheat oven to 400\u00b0F. Line a baking sheet with parchment paper.
    Place potatoes in a baking dish and toss with oil. Season to taste and bake 35-40 minutes, until golden and tender.
    Meanwhile, cut a small pocket in each pork chop. Fill pocket with pesto and spread a little pesto over surface of the chop. Wrap a slice of prosciutto around each pork chop. Bake 12-15 minutes, until cooked to taste.
    Serve pork and potatoes garnished with basil and accompanied by arugula salad.
