Salad Skewers - cooking recipe

Ingredients
    1/2 cup low-fat Italian or balsamic vinaigrette
    1 tbsp chopped fresh parsley
    1 head iceberg lettuce, cut into 1/2 inch pieces
    2 None medium carrots, sliced
    1 None large cucumber, sliced
    2 cups grape tomatoes
    1 lb mini mozzarella balls
Preparation
    Whisk together dressing and parsley. Set aside.
    Thread lettuce, carrots, cucumber, tomatoes and mozzarella onto skewers. Serve with dressing.
