Corn And Pepper Muffins - cooking recipe

Ingredients
    1 cup self-rising flour
    1/3 cup grated Cheddar cheese
    1/2 cup milk
    1/4 cup extra light olive oil
    1 None egg
    1/4 cup diced roasted red pepper
    1/2 cup canned creamed corn
Preparation
    Mix flour and cheese in a large bowl. Whisk milk, olive oil and egg in a medium bowl; add to flour mixture with red pepper and com. Season with salt and pepper. Gently stir until just combined (don't over mix).
    Grease a 6-cup microwaveable silicone muffin pan. Spoon batter into cups. Microwave on high 4-6 mins, or until a toothpick inserted into center comes out clean. Let stand 1 minute. Remove from pan; cool completely on wire rack.
