Caramelized Onion And Balsamic Relish - cooking recipe

Ingredients
    1/3 cup olive oil
    2 1/2 lbs large red onions, thinly sliced
    2 cloves garlic, crushed
    2 tsp yellow mustard seeds
    1/3 cup firmly packed brown sugar
    2/3 cup balsamic vinegar
    1/2 tsp salt
Preparation
    Heat oil in a large deep skillet on low heat. Add the onions and garlic and cook, covered, for about 30 mins until softened. Stir occasionally.
    Stir in the mustard seeds and cook 1 min or until fragrant. Add the sugar, vinegar and salt. Bring to a boil. Reduce the heat to low. Simmer, uncovered, stirring occasionally for about 5 mins, or until most of the liquid has evaporated and the onions are caramelized.
