Penne With Salmon And Arugula - cooking recipe

Ingredients
    2/3 lb penne pasta
    1/3 lb frozen peas
    1 lb salmon fillets, cubed
    1/2 lb sour cream
    2-3 tbsp lemon juice
    1/4 lb arugula
Preparation
    Cook the pasta according to the package instructions. About 2 mins before the end of the cooking time, remove about 3/4 cup of the water and set aside. Then add the peas to the pasta and drain in a colander.
    Add the reserved cooking water back into the saucepan, then add the fish and cook over a low heat for about 2 mins. Stir in the sour cream, lemon juice, pasta and peas and arugula. Warm through and season with salt and pepper to taste. Serve immediately.
