Spiced Beef Nachos - cooking recipe

Ingredients
    1 tbsp olive oil
    1 None red onion, finely chopped
    1 None red bell pepper, deseeded, finely sliced
    1 None long red chili, finely sliced
    2 cloves garlic, minced
    2 tsp dried oregano
    2 tsp ground cumin
    1 tsp ground cinnamon
    1 tsp smoked paprika
    1 tsp ground coriander
    1 lb ground beef
    1 (13.5 oz) can diced tomatoes
    1 (13.5 oz) can kidney beans, drained, rinsed
    7 oz tortilla chips
    3.5 oz Mexican cheese, grated
    1 None avocado
    1 tbsp lime juice
    1 None tomato, finely chopped
    1 None spring onion, finely chopped
    1 tbsp fresh cilantro leaves, finely chopped
    None None sour cream, to serve
    None None lime wedges, to serve
Preparation
    Heat oven to 350\u00b0F. Heat oil in a large frying pan over medium heat, saute onion, pepper, chili and garlic for 3-4 mins, until tender. Add oregano and spices and cook for 1 min, until fragrant. Increase heat to high, brown ground meat for 5-10 mins. Add diced tomatoes and 1/2 cup water. Simmer for 10 mins. Add kidney beans and simmer, stirring occasionally, for 10 mins, until thick.
    Arrange beef and 1/4 of the tortilla chips in a baking dish. Sprinkle with grated cheese then bake for 10-15 mins, until cheese melts.
    Meanwhile, to make guacamole, mash avocado and lime juice. Add tomato, spring onion and cilantro. Serve nachos with remaining tortilla chips, sour cream, guacamole and lime wedges.
