Quick Scallop And Asparagus Stir Fry - cooking recipe

Ingredients
    2 tbsp oil
    1 lb scallops, cleaned
    1 None large red pepper, seeded, cut into strips
    1 bunch asparagus, trimmed, cut diagonally into 1 1/2 inch pieces
    1 1/2 inches fresh ginger, peeled, cut into matchsticks
    2 cloves garlic, minced
    1/4 cup teriyaki sauce
    1 tbsp sherry
    4 None spring onions, sliced diagonally
    None None steamed rice, to serve
Preparation
    In a wok or large frying pan, heat 1 tsp oil over high heat. Stir-fry 1/2 the scallops for 2-3 mins, until just cooked through. Remove from wok. Repeat with remaining scallops.
    Add remaining oil to wok. Stir-fry pepper, asparagus, ginger and garlic for 1-2 mins, until just tender. Add teriyaki sauce and sherry. Cook for 1 min. Return scallops to wok along with spring onions. Toss to combine. Serve stir-fry with rice.
