Bruschetta With Ricotta, Tomatoes And Capers - cooking recipe

Ingredients
    2 None ripe tomatoes, diced
    1/2 None red onion, finely chopped
    2 tbsp fresh basil leaves, chopped
    2 tsp balsamic vinegar
    8 thick slices Italian bread
    2 cloves garlic, halved
    7 oz ricotta
    1 tbsp capers, chopped
Preparation
    In a bowl, combine tomatoes, red onion, basil and balsamic vinegar. Season.
    Grill or toast bread until golden. While still hot, rub 1 side of each slice with garlic. Arrange toast on a serving platter. Top with tomato mixture and spoonfuls of ricotta. Sprinkle with capers. Season and serve.
