Farmhouse Spinach And Double Cheese Braid - cooking recipe

Ingredients
    1 pkg (10 oz) frozen chopped spinach, thawed and squeezed dry
    1 tbsp butter
    1 medium leek, finely chopped
    2 tsp chopped fresh thyme
    2 1/2 cups self-rising flour
    3/4 cup finely grated Parmesan cheese
    1 tsp seasoned pepper
    1/4 cup chopped fresh basil leaves
    1 cup crumbled feta cheese
    1 cup milk, approximately
Preparation
    Preheat the oven to 400\u00b0F.
    Heat butter in large skillet on medium heat. Add leek and thyme; cook, stirring occasionally, until leek is soft. Add spinach; cook, stirring, for 5 mins or until any liquid has evaporated. Cool.
    Sift flour into large bowl. Stir in Parmesan cheese, pepper, basil, three-quarters of feta, spinach mixture and enough milk to mix to a soft, sticky dough.
    Turn dough onto floured surface; knead until smooth. Divide dough into 3 pieces; shape into 14-inch logs. Braid logs together on greased baking pan. Sprinkle with remaining feta.
    Bake for 40 mins or until golden brown. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
