Baked Garlic And Lemon Chicken - cooking recipe

Ingredients
    4 None bone-in chicken breast halves with skin
    1/4 cup olive oil
    20 cloves garlic, peeled
    1 1/2 lbs small new potatoes, cut into cubes
    3 sprigs fresh rosemary
    4 oz mixed green and black olives
    1 None lemon, cut into wedges
Preparation
    Preheat the oven to 400\u00b0F. Season the chicken with salt and pepper. Heat 2 tbsp oil in a large skillet over medium-high heat, add the chicken, and cook until browned. Remove to a plate and set aside. Add the garlic to the skillet and cook, stirring, for 1 min. Remove the garlic to a large bowl.
    Add the potatoes, rosemary and olives to the garlic. Season with salt and pepper and mix well. Spread the potato mixture in a large roasting pan and top with the chicken and lemon wedges. Drizzle over the remaining 2 tbsp oil and bake for 40-50 mins until the chicken is cooked through. Serve immediately.
