Corn, Pepper And Cheese Muffins - cooking recipe

1 1/4 cups cornmeal
3/4 cup flour, sifted
3/4 cup grated Cheddar cheese
2 tsp baking powder
1 None red pepper, seeded and finely diced
1/4 cup snipped chives
1 cup buttermilk
2 None eggs, lightly beaten
1/2 cup canned creamed sweet corn

Preheat the oven to 350\u00b0F. Spray a 12-cup muffin pan with no stick cooking spray or line with paper liners.
Mix cornmeal, flour, cheese, baking powder, pepper and chives in a large bowl. Mix buttermilk, eggs and creamed corn in a medium bowl. Stir into dry ingredients until just combined. Spoon into prepared pan, filling each cup 2/3 full.
Bake for 25 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool slightly on wire rack. Serve warm.
