Gluten-Free Mango, Almond And Coconut Muffins - cooking recipe

Ingredients
    2 1/2 cups gluten-free self-rising flour
    3/4 cup firmly packed brown sugar
    1/4 cup flaked coconut
    1/2 cup ground almonds
    1 tsp xanthan gum
    1 cup milk
    1/2 cup vegetable oil
    1 None egg, lightly beaten
    2 small mangoes, 1 chopped, 1 sliced
Preparation
    Preheat the oven to 375\u00b0F. Grease a 12-cup muffin pan and line with paper liners.
    Combine flour, 2/3 cup of the brown sugar, coconut, almonds and xanthan gum in a large bowl.
    Whisk milk, oil and egg. Add to dry ingredients and stir until just combined (do not over-mix). Add chopped mango and mix until just combined. Spoon into muffin cups. Place 2-3 slices of mango on top of each muffin. Sprinkle with remaining brown sugar.
    Bake for 20-25 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool on wire rack.
