Baked Pork Meatballs In Tomato Sauce - cooking recipe

Ingredients
    4 slices bread, crusts removed
    1/2 cup milk
    2 lbs ground pork
    2 medium onions, finely chopped
    4 cloves garlic, crushed
    1 None egg, lightly beaten
    1 tsp dried oregano leaves
    1/2 cup freshly grated Parmesan cheese
    2 tbsp vegetable oil
    2 cups tomato puree
    1 can (14 oz) diced tomatoes
    1 cup chicken stock
    1/2 cup fresh basil leaves
    7 oz mini mozzarella balls, drained, torn
Preparation
    Preheat the oven to 425\u00b0F.
    Place bread in a large bowl; cover with milk. Mix with hands to break up. Add ground pork and 1/2 each of the onion and garlic. Add the egg, oregano and 1/3 cup of the Parmesan cheese. Season. Mix well with hands. Divide mixture into 24 portions. Roll each portion into a ball.
    Heat half the oil in a 13 x 10-inch flameproof roasting pan on medium heat. Add meatballs; cook and turn for 5-8 mins or until browned. Transfer to a heatproof plate.
    Add remaining oil, onion and garlic to pan; cook and stir for 5 mins or until soft. Add tomato puree, tomatoes and stock; bring to a boil. Season. Return meatballs to pan; turn to coat in sauce. Sprinkle with basil, mozzarella and remaining Parmesan cheese.
    Bake for 12-15 mins or until browned.
