Lemon Mascarpone Cake - cooking recipe

Ingredients
    3/4 cup all purpose flour
    1 tsp baking powder
    1 None lemon, zested and juiced
    2/3 cup soft butter
    3/4 cup sugar
    2 None eggs
    2/3 cup mascarpone cheese
    1/2 cup salted, roasted pistachio nuts
    2/3 cup powdered sugar
Preparation
    Preheat the oven 325\u00b0F. Mix the flour, baking powder and lemon zest in a bowl. Separately, beat the butter and sugar until creamy, then stir in the eggs one at a time. Add the mascarpone, flour mixture, lemon juice and stir it well to form a smooth batter.
    Pour the mixture into a greased and floured 8 cup loaf pan, smooth it over and bake it for about 1 hour.
    Mix the powdered sugar with 3 tbsp of water. Take the cake out of the oven and let it rest for 10 mins in the loaf pan, then turn it out, and leave it to cool completely. Spread the sugar glaze on the cake and sprinkle it with pistachios.
