Carrot Soup With Prawns - cooking recipe
Ingredients

1 kg carrots, peeled and sliced
2 None apples, peeled, cored and chopped
1 None onion, peeled and diced
2 tbsp vegetable oil
1 litre vegetable stock
150 g whipping cream
8 None prawns, blanched
1/2 bunch dill, finely chopped
Preparation

Heat oil in a saucepan and saute carrots, onions and apples until soft. Add stock, and season. Simmer for 20 mins. Puree with a hand blender until smooth.
Whip cream until stiff. Divide soup between four soup bowls and garnish each serving with a spoonful of whipped cream, two prawns and a sprinkle of dill.
