Chocolate Cherry Fudge - cooking recipe

Ingredients
    13 oz semi-sweet chocolate, coarsely chopped
    1 can (14 oz) sweetened condensed milk
    2/3 cup flaked coconut, plus additional 1 tbsp, to sprinkle
    1/2 cup coarsely chopped glace cherries
Preparation
    Grease and line an 8 x 4 inch loaf pan with parchment paper, extending the paper over long sides for handles.
    Place chocolate and milk in a large microwave-safe bowl. Microwave on high for 1 min. Stir to combine. Microwave further 30 seconds, or until melted and smooth. Add coconut and cherries; mix well. Pour into prepared pan; smooth top. Sprinkle additional coconut over top.
    Refrigerate 4 hours, or until set. Cut into slices to serve.
