Egg And Goat Cheese Pizzas - cooking recipe

Ingredients
    250 g plain flour
    1 1/2 tsp caster sugar
    1/2 tsp salt
    4 g dried active yeast, dissolved in 150ml lukewarm water
    3 tbsp olive oil
    150 g passata
    1 tbsp tomato puree
    1/2 tsp paprika
    6 sprigs fresh thyme, leaves stripped from stems
    200 g soft goat's cheese, cut into 12 slices
    100 g frozen peas
    125 g spring onions, sliced
    2 None eggs
    3 sprigs fresh basil, leaves stripped from stems
Preparation
    In a bowl, mix the flour, sugar and salt. Add the yeast and oil and knead with the dough hook of a mixer to a smooth dough. Cover and allow to rest in a warm place for 40 mins.
    Line a baking pan with parchment paper. On a lightly floured work surface and with floured hands, knead the dough, then cut in half. Roll each half into a 8 inch diameter pizza base. Place on the baking pan and allow to rest for 20 mins.
    Preheat the oven to 400\u00b0F. In a bowl, mix the paste, tomato puree, paprika and half the thyme. Season with salt and black pepper. Spread over the pizza bases and bake for 10 mins.
    Arrange the cheese over the pizzas and sprinkle with the peas and scallions. Carefully crack an egg on each pizza. Sprinkle with the remaining thyme. Bake for 10-12 mins, until the eggs are set. Garnish with the basil leaves.
