Ham And Cheese Eggplant Rolls - cooking recipe

Ingredients
    2 None medium eggplants, each cut lengthways into 12 slices
    8 tbsp olive oil
    12 slices cooked ham, halved
    4 sprigs fresh sage, a few leaves reserved for garnish, remainder cut into fine strips
    1 3/4 cup grated Emmental or Swiss cheese
    1/4 cup grated Parmesan
Preparation
    Preheat the oven to 425\u00b0F. Grease an ovenproof dish. Sprinkle the eggplant slices with salt on both sides and allow to rest for 15 mins. Blot with paper towels.
    Heat 2 tbsp oil in a frying pan, add 6 slices eggplant and sear until lightly browned on both sides. Remove and drain on paper towels. Repeat 3 times with the remaining oil and eggplant.
    Top each eggplant slice with a half slice of ham. Sprinkle a bit of Emmental and sage over each and roll up. Place in the baking dish and top with Parmesan. Bake for 10 mins. Garnish with sage.
