Pear And Cinnamon Muffins - cooking recipe

Ingredients
    2 1/4 cups all-purpose flour
    1 tbsp baking soda
    1/2 tsp ground cinnamon, plus extra to dust
    1/2 cup granulated sugar
    2 None eggs, lightly beaten
    1 cup milk
    2/3 cup olive oil
    2 None pears, peeled, cored, diced
Preparation
    Preheat oven to 400\u00b0F. Lightly grease 3 - 6-cup muffin pans.
    Combine flour, baking soda, cinnamon and sugar. Whisk together eggs, milk and oil. Mix into dry ingredients until just combined. Fold in 2/3 of pears. Distribute between prepared pans and top with remaining pears. Dust with cinnamon and bake for 20 mins, until golden and a skewer inserted in the center comes out clean. Let cool for 5 mins in pans then turn out onto a wire rack to cool completely.
