Raspberry Pistachio Friands - cooking recipe

1/2 cup powdered sugar
1.75 oz unsalted pistachio kernels, ground, 2 tbsp reserved for garnish
1/2 cup all-purpose flour, sifted
3/4 cup butter, melted
6 None large egg whites
5 oz raspberries
Preparation

Preheat the oven to 350\u00b0F. Lightly grease a 12-hole friand pan or small muffin pan.
In a bowl, combine the powdered sugar, ground pistachio and flour. Mix in the butter, stirring gently until just combined.
In a separate bowl, lightly whisk the egg whites until frothy. Fold into the pistachio mixture, then stir in the raspberries.
Spoon mixture into friand pan and top with extra raspberries and reserved pistachio. Bake for 20-25 mins, until a skewer inserted in the center comes out clean. Allow the friands to cool in the pan for 5 mins before transferring to a wire rack to cool completely.
