Roast Lamb With Prosciutto And Herb Filling - cooking recipe

Ingredients
    2 tbsp vegetable oil
    1 None onion, finely chopped
    1 clove garlic, crushed
    2 cups fresh breadcrumbs
    4 oz prosciutto, finely chopped
    1/4 cup finely chopped parsley
    1/4 cup finely chopped mint
    1 None egg, lightly beaten
    2 1/4 lbs saddle of lamb, butterflied
    2 bunches cherry tomatoes on the vine
Preparation
    Preheat the oven to 400\u00b0F.
    Heat 2 tsp of oil in a large skillet on high heat. Saute onion and garlic for 3 mins, until onion is tender. Cool in large bowl.
    Add breadcrumbs, prosciutto, herbs and egg. Season to taste and mix well.
    Place lamb, skin side down, on a flat surface. Spoon filling along center. Fold lamb over to enclose, securing with kitchen string. Place lamb on a rack in a roasting pan. Rub with remaining oil and season to taste.
    Roast for 40-45 mins, until cooked to desired doneness. Add tomatoes 10 mins before end of cooking time. Rest lamb, covered, for 15 mins. Serve carved with tomatoes and accompaniments.
