Rosti With Avocado, Smoked Salmon And Poached Eggs - cooking recipe

1 lb potatoes, peeled and grated
2 tbsp self-rising flour
4 tbsp (1/2 stick) butter
2 tbsp olive oil
1 large avocado, seeded, peeled and sliced
3 oz sliced smoked salmon
4 None eggs, poached
None None Lemon wedges and dill sprigs, for garnish
Preparation

Place potatoes into a colander and rinse under cold water until water runs clear. Drain well, squeezing out excess water.
Mix potato and flour in a medium bowl. Season to taste. Form into 8 patties, about 2 1/2 inches in diameter.
Heat butter and oil in a medium skillet on medium heat. Fry potato rosti in 2 batches, for 3-4 mins each side, pressing firmly with a spatula, until golden and crisp. Drain on paper towels.
Top rosti with avocado, salmon slices and a poached egg. Season with cracked black pepper. Garnish with lemon wedges and dill sprigs.
