Spicy Carrot Salad - cooking recipe

Ingredients
    1 2/3 lbs carrots, peeled and quartered
    2 cloves garlic, peeled
    1/4 cup extra virgin olive oil
    2 tbsp red wine vinegar
    1 tsp ground paprika
    1 tsp ground cumin
    1 tsp ground coriander
    1 pinch cayenne pepper
    None None Cilantro and mint leaves, to serve
Preparation
    Place the carrots and garlic in a medium saucepan and cover with salted water. Bring to a boil and cook for 10 mins, or until tender. Drain and coarsely mash. Stir in the remaining ingredients. Season to taste.
    Top with the cilantro and mint leaves. Serve as a dip for flat breads or as a side dish to barbecued meat.
