Turkey Burger With Cranberry Onions - cooking recipe

1 tbsp olive oil
1 None large red onion, thinly sliced
2 tbsp red wine vinegar
1 tbsp light brown sugar
2 tbsp cranberry sauce

13.5 oz ground turkey
3 None spring onions, finely chopped
3 tbsp fresh flat-leaf parsley leaves, roughly chopped
4 rolls bread, halved, toasted
8 leaves lettuce
1 None medium tomato, thinly sliced
4 slices Swiss cheese
Preparation

To make the cranberry onions, heat oil in a medium frying pan over medium heat. Cook onion, stirring occasionally, for 10-15 mins, until soft. Add vinegar and sugar. Cook, stirring, for 5 mins, or until caramelized. Stir in cranberry sauce then remove from heat.
Meanwhile, in a medium bowl, combine turkey, spring onions and parsley. Season. Using your hands, shape into 4 patties. Oil a large frying pan and place over medium-high heat. Cook patties for 12 mins, or until seared on both sides and cooked through. Remove from heat and cover to keep warm.
Fill rolls with lettuce, tomato, patties, cheese and onions. Serve.
