Baked Spinach And Pine Nut Mushrooms - cooking recipe

8 large button mushrooms
4 oz baby spinach leaves
1/4 cup olive oil or no stick cooking spray
3 tbsp butter
1 None onion, finely diced
1 tbsp fresh chopped herbs or 1 tsp dried
1 tsp sea salt
1 1/2 cups panko or fresh breadcrumbs
1/4 cup pine nuts

Preheat the oven to 350\u00b0F. Remove the stem from the mushrooms and arrange the mushrooms on a foil-lined baking pan. Top each with a small handful of spinach leaves and drizzle with oil or spray with no stick cooking spray.
Melt the butter in a medium skillet on medium heat. Saute the onion for 4-5 mins until soft and fragrant. Stir in the herbs and salt. Add the breadcrumbs and pine nuts; mix well.
Divide the pine nut mixture among the mushrooms. Mound it up to cover the spinach leaves. Drizzle or spray with a little more oil.
Bake for 15-20 mins or until the crumbs are golden and the mushrooms are tender when pierced with a knife.
