Fish Florentine - cooking recipe

Ingredients
    4 None firm white fish fillets (6 oz each)
    1 None egg, lightly beaten
    2 tbsp flour, seasoned with salt and pepper
    2 tbsp olive oil
    10 oz baby spinach
    1 pkg (9 oz) 90-second microwave rice
    None None Lemon wedges, to serve
Preparation
    Dip fish into egg. Coat in flour, shaking off any excess. Heat oil in a large nonstick skillet on high heat. Cook for 2-3 mins each side, until golden and cooked through.
    Meanwhile, cook spinach in microwave or in skillet for 2 mins, until just wilted. Season. Cook rice according to package directions.
    Serve fish with spinach and rice. Serve with lemon wedges.
