Chocolate Apricot Truffles - cooking recipe

Ingredients
    5 oz finely chopped dried apricots
    1 cup desiccated coconut
    1/3 cup sweetened condensed milk, plus 2 tbsp
    7 oz milk chocolate chips
    2 tsp vegetable oil
Preparation
    Line a baking tray with parchment paper.
    Combine apricots, coconut and 1/3 cup condensed milk. Roll level tablespoons of mixture into balls and place in a single layer on prepared tray.
    Combine chocolate and oil in a microwave-safe bowl. Cook on MEDIUM-LOW (30%) for 2 mins, stirring occasionally, until chocolate is melted.
    Working with 1 ball at a time, use a fork to coat balls into chocolate then place on tray. Sprinkle with a little of the remaining coconut. Freeze balls until set.
