Roasted Sweet Potatoes And Wilted Spinach - cooking recipe

Ingredients
    1 lb sweet potatoes, peeled and cubed
    1/4 cup minced red onion
    1/4 cup diced red pepper
    2 tsp minced fresh rosemary
    1 clove garlic, sliced
    2 tbsp olive oil
    1 tbsp balsamic vinegar
    6 cups baby spinach
    1/2 cup chopped walnuts
Preparation
    Preheat oven to 425\u00b0F. On a baking sheet, toss together potatoes, onion, pepper, rosemary, garlic, olive oil and vinegar. Season. Roast for 25-30 mins, or until potatoes are tender.
    Transfer potatoes and pan juices to a large bowl. Add spinach and toss until wilted. Garnish with walnuts. Serve warm.
