Chocolate Pistachio Cakes With Chocolate Fudge Sauce - cooking recipe

Ingredients
    1/2 cup pistachios, coarsely chopped
    8 tbsp (1 stick) butter, softened
    1 cup sugar
    2 tsp vanilla extract
    2 None eggs
    3/4 cup self-rising flour
    1/3 cup unsweetened cocoa powder
    1/3 cup stale breadcrumbs
    1/3 cup milk
    2 oz semi-sweet chocolate, coarsely grated
    6 oz semi-sweet chocolate, chopped coarsely
    2 tbsp butter
    2/3 cup light cream
Preparation
    Preheat the oven to 350\u00b0F. Grease six 1-cup ovenproof molds or ramekins. Sprinkle nuts evenly over the bottom of each mold. Place molds on a baking pan.
    Beat butter, sugar and vanilla extract in medium bowl with electric mixer until just combined. Add eggs, one at a time. Stir in sifted flour and cocoa, then breadcrumbs, milk and grated chocolate. Spoon mixture into the molds.
    Bake about 30 mins. Let stand 5 mins before unmolding onto serving plates.
    Meanwhile, for the chocolate fudge sauce, place chopped chocolate and butter in medium heatproof bowl over medium saucepan of simmering water (do not allow water to touch the bottom of the bowl). Stir until mixture is smooth. Stir in cream.
    Serve cakes with drizzled chocolate fudge sauce and sprinkled with additional pistachios.
