Spiced Beef Couscous Salad - cooking recipe

Ingredients
    1 None medium red onion, finely chopped
    None None cooking oil spray
    1 lb ground beef
    2 tsp ground cumin
    2 tsp ground coriander
    1 tsp ground turmeric
    2 cloves garlic, crushed
    1 (14 oz) can corn kernels, drained
    1 (14 oz) can red kidney beans, rinsed
    1 cup couscous
    3 tbsp butter, chopped
    3/4 cup boiling water
    2 None medium tomatoes, coarsely chopped
    1 None avocado, finely chopped
    None None lemon wedges, to serve
Preparation
    Heat a large frying pan over moderate heat. Spray onion with oil. Add onion to pan and cook, stirring, 3-4 mins, or until soft.
    Add ground beef and cook, stirring with a wooden spoon to break up lumps, 5 mins, or until browned. Add spices and garlic to pan and cook, stirring, 30 seconds, or until fragrant. Add corn and beans and cook, stirring 5 mins, or until heated. Remove from heat.
    Place couscous and butter in a large heatproof bowl and stir in boiling water. Cover with plastic food wrap and set aside 5 mins, or until liquid is absorbed. Using a fork, fluff and separate grains.
    Add ground beef mixture, tomatoes and avocado to couscous. Season with salt. Stir to combine. Spoon into shallow serving bowls. Serve with lemon wedges.
