Creamy Spinach And Prosciutto Macaroni - cooking recipe

Ingredients
    3 oz thinly sliced prosciutto
    18 oz dried macaroni
    2 tbsp butter
    1/3 cup all-purpose flour
    2 cups milk
    1/3 cup grated Cheddar cheese
    2 None large eggs, lightly beaten
    2 oz baby spinach
    None None salad greens, to serve
Preparation
    In a large frying pan, cook prosciutto over high heat for 2-3 mins, until crisp. Break into pieces and set aside.
    Cook pasta in boiling salted water until al dente. Drain then return to pot.
    Meanwhile, in a large saucepan, melt butter over medium heat. Cook flour, stirring, for 1 min. Gradually whisk in milk until smooth. Cook, stirring, until sauce boils and thickens. Reduce heat and simmer for 3 mins. Mix in cheese and season to taste.
    Add sauce, eggs and spinach to pasta and toss to combine. Transfer to a serving bowl and top with prosciutto. Serve with a leafy side salad.
