Cappuccino Whoopie Pies - cooking recipe

Ingredients
    2 tbsp instant coffee granules, dissolved in 1 tbsp boiling water
    1/2 cup unsalted butter, softened
    1/2 cup granulated sugar
    1 None large egg
    1 1/3 cups all-purpose flour, sifted
    1/4 cup self-rising flour, sifted
    1 tbsp cocoa powder, plus extra to dust
    1 tsp baking soda
    2/3 cup buttermilk
    9 oz cream cheese, softened
    1/4 cup powdered sugar
    2 tsp vanilla bean extract
    2/3 cup heavy cream
Preparation
    Preheat oven to 400\u00b0F. Grease and line 2-3 baking trays with parchment paper.
    Beat butter, sugar and egg until light and fluffy. Beat in flour, cocoa powder and baking soda. Add buttermilk and coffee mixture. Mix until smooth. Drop level tablespoons of mixture about 2 inches apart onto prepared trays. Bake for 10 mins. Let cool on trays.
    Meanwhile, to make the vanilla cream cheese filling, beat cream cheese, sugar and vanilla until smooth. Beat in cream. Transfer to a piping bag fitted with a 3/4 inch fluted tip. Pipe filling onto flat sides of 1/2 of the cooled whoopie pies. Sandwich with remaining whoopie pies.
    Serve dusted with cocoa powder.
