Spinach And Cheese Pie (Spanokopita) - cooking recipe
Ingredients

2 tbsp olive oil
2 bunches fresh spinach, trimmed and chopped
6 None green onions, sliced
4 None eggs, lightly beaten
1 1/4 cups crumbled feta cheese
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
1/4 tsp ground nutmeg
8 sheets phyllo dough
None None No stick cooking spray or 4 tbsp butter, melted
None None Salad, to serve
Preparation

Preheat the oven to 350\u00b0F. Grease an 8-inch square baking dish. Heat oil in a large skillet on high heat. Saute spinach and onions for 4-5 mins, until spinach has wilted. Cool slightly. Place mixture in a strainer; press to remove excess liquid.
Transfer spinach mixture to a large bowl. Stir in eggs, cheeses, parsley and nutmeg. Season to taste.
Spray 4 sheets phyllo with cooking spray or brush with butter. Fold each in half. Layer in prepared pan. Spoon filling over phyllo. Repeat layering with remaining 4 sheets phyllo, placing over filling to cover.
Bake for 20-25 mins, until crisp and golden. Cut into squares and serve with salad.
