Ingredients

1 cup chopped dates
8 tbsp (1 stick) butter, softened
1/2 cup sugar
1 None egg
3/4 cup self-rising flour
1/2 cup flaked coconut
Preparation

Preheat the oven to 350\u00b0F. Grease an 8 x 4-inch loaf pan. Line bottom and long sides with parchment paper; grease paper.
Combine dates with 1/2 cup boiling water. Cover and let stand 15 mins.
Beat butter and sugar in a large bowl with an electric mixer until light and fluffy. Add eggs, beating until combined. Fold in sifted flour, coconut and undrained dates. Spoon into prepared pan.
Bake for 40 mins, until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
