Ingredients

16 oz mixed dried fruit
5 cups boiling water
3 None English breakfast teabags
2 cups sugar
1 None vanilla bean pod, split
1 None cinnamon stick
None None thick plain yogurt, to serve
Preparation

Place dried fruit in a large heatproof bowl. Pour in 2 cups boiling water. Set aside 20 mins. Drain well.
Meanwhile, combine remaining water and teabags in a heavy-based saucepan. Set aside 10 mins to infuse. Remove teabags. Add sugar, vanilla bean pod and cinnamon. Stir over medium heat 1-2 mins, until sugar dissolves. Bring to a boil. Add fruit and reduce heat to low. Simmer, uncovered, 25-30 mins, until fruit is soft. Remove from heat and cool 15 mins. Cover loosely with plastic wrap and chill 1 hour. Remove vanilla pod and cinnamon stick. Serve with a dollop of yogurt.
