Banana And Pecan Surprise Muffins - cooking recipe

Ingredients
    2 1/4 cups self-rising flour
    51/3 cup all-purpose flour
    1/2 tsp baking soda
    1 cup pecans, chopped, toasted
    3/4 cup brown sugar
    10.5 oz peeled bananas, mashed
    1 cup buttermilk
    1/4 cup vegetable oil
    2 None large eggs, lightly beaten
    12 squares milk chocolate
    24 slices dried banana
Preparation
    Preheat oven to 350\u00b0F. Lightly grease a 12-cup muffin pan.
    Sift flour and baking soda into a large bowl. Stir in pecans and sugar. In a separate bowl, whisk together mashed bananas, buttermilk, oil and eggs. Mix into flour mixture until just combined. Spoon 1 tbsp batter into each muffin recess. Top with a square of chocolate. Top with remaining batter, until each recess is 3/4 full. Arrange 2 dried banana slices on top of each. Bake for 20-25 mins, until a skewer inserted in the center comes out clean.
    Serve warm.
