Curried Rice Salad - cooking recipe
Ingredients

1 cup long-grain rice
1 cup frozen peas
1 cup sour cream
5 tbsp 2% milk
4 tbsp cider vinegar
1 tbsp sugar
1-2 tsp curry powder (according to taste)
1 None small red pepper, deseeded and cut into strips
10 oz canned whole button mushrooms, drained
10 None green onions, thinly sliced
Preparation

Cook the rice in boiling salted water according to the package instructions. Add the peas 5 mins before the end of cooking. Drain, refresh with cold water and allow to cool.
In a bowl, mix the sour cream, milk, vinegar, sugar and curry powder. Season with salt and black pepper.
Add the pepper, mushrooms and green onions to the rice mixture and stir. Drizzle over the dressing.
