Bolognese Sauce - cooking recipe
Ingredients

1 tbsp olive oil
1 None onion, finely chopped
1 stalk celery, finely chopped
1 None carrot, finely chopped
2 oz pancetta, finely chopped
2 cloves garlic, minced
1 lb ground beef
2 tbsp tomato paste
1 (15 oz) can tomato puree
1 (13.5 oz) can diced tomatoes
1/4 cup red wine
2 None bay leaves
1/2 tsp dried oregano
2 tbsp chopped parsley leaves, to serve
Preparation

Heat oil in a large Dutch oven over high heat. Saute onion, celery, carrot, pancetta and garlic for 3-4 mins, until vegetables are tender. Add ground beef and cook for 4-5 mins, until browned. Stir in tomato paste and cook for 1 min. Add tomato puree, diced tomatoes, wine, bay leaves and oregano. Bring to a boil then reduce heat and simmer for 20-25 mins, until thickened. Season then fold in parsley.
