Salami Salad - cooking recipe
Ingredients

250 g pickled cucumbers, drained and diced
2 None onions, peeled and diced
1 None red pepper, deseeded and diced
1 None yellow pepper, deseeded and diced
250 g salami (in one piece), diced
3 tbsp fresh chopped chives
8 tbsp light balsamic vinegar
4 tbsp olive oil
1 pinch sugar
Preparation

Mix the pickles, onions, peppers, salami and chives in a bowl. Whisk together the vinegar, oil and sugar and season to taste. Pour over the salad, toss to mix and let stand for 30 mins before serving. Keep in a sealed jar in the fridge for up to 3 days.
