Apple Rémoulade - cooking recipe

Ingredients
    1 cup sour cream
    2/3 cup mayonnaise
    6 oz sweet pickles, drained, 3-4 tbsp brine reserved, finely diced
    2 None apples, cored and finely diced
    2 oz fresh chives, chopped
    6 sprigs fresh flat-leaf parsley, finely chopped
    4 None eggs, hardboiled, peeled and finely chopped
    1 None onion, peeled and finely diced
Preparation
    For the dressing, mix the sour cream and mayonnaise. Season with salt and black pepper and stir in the pickle brine.
    Set aside 1 tbsp each pickles and apples and add the remainder to the dressing along with the herbs, eggs and onion. Stir well and garnish with the reserved pickles and apple.
