Fruit And Nut Rice Pilaf - cooking recipe

1 3/4 cups chicken broth
1 tbsp olive oil
1 (6.6. oz) package toasted almond rice pilaf mix, like Near East
1/2 cup dried cranberries
1/2 cup dried apricots, diced
1/2 cup chopped scallion
2 tbsp minced fresh parsley
Preparation

In a saucepot over high heat, bring broth and oil to a boil. Stir in pilaf mix, cover and simmer for 18 min, or until tender. Stir in dried fruit, scallion and parsley.
