Char Grilled Vegetable Salad - cooking recipe

Ingredients
    1/4 cup olive oil
    2 tbsp lemon juice
    2 tsp maple syrup
    1 tsp Dijon mustard
    1 clove garlic, minced

    3.5 oz baby arugula
    4 oz char-grilled eggplants, drained, sliced
    5 oz marinated artichokes, drained, halved
    3.5 oz semi-dried tomatoes, drained
    4 oz char-grilled peppers, drained, sliced
    1 1/2 oz black olives
    3/4 cup croutons
    3.5 oz feta cheese, crumbled
Preparation
    To make the salad dressing, whisk together olive oil, lemon juice, maple syrup, mustard and minced garlic. Season to taste.
    In a large bowl, combine arugula, vegetables and olives. Add croutons and dressing. Toss to combine. Sprinkle feta over top. Serve.
