Minted Beef And Feta Pasta - cooking recipe

Ingredients
    14 oz bow tie pasta (farfalle)
    14 oz ground beef
    2 cloves garlic, crushed
    1 1/2 tbsp vegetable or olive oil
    1 large red onion, thinly sliced
    5 oz green beans, trimmed
    1 large red pepper, seeded and thinly sliced
    1 tsp finely grated lemon peel
    1 tbsp lemon juice
    1 cup crumbled feta cheese
    1/3 cup torn mint leaves
Preparation
    Cook pasta in a large saucepan of boiling salted water according to package directions. Drain; return to pan.
    Meanwhile, combine ground beef and garlic in a medium bowl.
    Heat 1 tbsp of the oil in a large skillet on medium-high heat. Add ground beef; cook, stirring with a wooden spoon to break up lumps, for 4 mins or until browned and cooked. Transfer to a heatproof bowl. Wipe pan clean.
    Heat remaining 1/2 tbsp oil in pan on medium-high heat. Add onion; cook and stir for 3-4 mins or until soft. Add green beans and pepper; cook and stir for 2 mins or until tender.
    Stir in ground beef, 2/3 cup boiling water and lemon peel. Bring to a boil. Reduce heat to low; cover, simmer for 2 mins. Add lemon juice.
    Add beef mixture, feta and mint to pasta; toss to combine. Serve.
