Banana Cake With Butterscotch Sauce - cooking recipe

4 None large ripe bananas, 2 thinly sliced diagonally, 2 mashed
1 cup brown sugar
9 tbsp butter, softened
2 None large eggs
1 1/4 cups self-rising flour, sifted
2/3 cup buttermilk
None None ice-cream, to serve
None None Butterscotch Sauce
2 1/2 tbsp butter
1 1/2 cups heavy cream
1/2 cup sugar
Preparation

Preheat oven to 350\u00b0F. Lightly grease and line an 8-inch round cake pan. Sprinkle pan base with 1/2 cup brown sugar. Arrange sliced bananas on top.
For the batter, cream butter and remaining brown sugar together using an electric mixer. Fold in flour, mashed bananas and buttermilk. Spoon mixture evenly into pan. Bake 55-60 mins.
Meanwhile, for the butterscotch sauce, melt butter in small saucepan on medium. Add cream and sugar, stirring to dissolve. Bring to a boil, stirring. Reduce heat and simmer 1-2 mins. Drizzle on warm cake and serve with ice-cream.
