Apricot Chicken With Rice - cooking recipe

2 tbsp all-purpose flour
1 tbsp Portuguese chicken seasoning mix
1 1/4 lb chicken breasts, trimmed, thickly sliced
2 tbsp vegetable oil
1 None white onion, halved, thinly sliced
1 2/3 cups apricot juice
7 oz dried apricots, halved
1 None large red pepper, cut into 1 inch pieces
5.25 oz green beans, trimmed
2 tbsp fresh flat-leaf parsley, chopped
None None cooked long-grain white rice, to serve
Preparation

Combine flour and seasoning mix. Coat chicken. Heat 1 tbsp oil in a large frying pan over medium heat. Add chicken and cook for 5-8 mins, or until seared. Remove from heat. Add remaining oil to pan. Add onion and cook for 4-5 mins, or until soft. Add apricot juice and 1/2 cup water. Bring to a boil. Return chicken to pan along with apricots. Simmer, uncovered, stirring occasionally, for 10 mins, or until chicken is cooked and sauce thickens slightly.
Add pepper and beans and cook for 3-5 mins, or until vegetables are tender. Remove from heat and add parsley. Distribute rice between serving plates. Top with chicken mixture. Serve immediately.
