Mushroom And Asparagus Tart - cooking recipe

Ingredients
    4 sheets filo dough
    4 1/2 tbsp butter, melted
    1 tbsp breadcrumbs
    7 oz mushrooms, finely sliced
    1 bunch asparagus, trimmed, halved lengthwise
    2 tsp dried currants
    1 None egg, beaten
    2 oz cheddar cheese, sliced
Preparation
    Preheat oven to 400\u00b0F. Line a baking tray with parchment paper.
    Brush 1 sheet of filo dough with butter and sprinkle with 1 tsp breadcrumbs. Repeat layers with remaining filo, 3 tbsp butter and breadcrumbs, layering together and finishing with a layer of breadcrumbs. Cut stack in 1/2 and stack together. Transfer to prepared tray, roll edges inwards to create a border then bake for 6-8 mins, until light golden brown.
    Heat remaining butter over medium heat. Saute mushrooms, asparagus and currants for 3-4 mins, until tender. Arrange over pastry, drizzle with egg and top with sliced cheese. Bake for 10-15 mins, until cheese has melted. Cut into slices and serve.
