Bacon, Macadamia And Apricot Stuffed Turkey - cooking recipe

Ingredients
    2 slices bacon, finely chopped
    2 tsp olive oil
    1 None onion, finely chopped
    3 cloves garlic, crushed
    1/3 cup dry white wine
    1/3 cup dried apricots, finely chopped
    1/4 cup currants
    3 cups fresh breadcrumbs
    1/2 cup macadamias, toasted and chopped
    1 None egg
    2 tbsp chopped parsley
    1/2 tsp dried thyme
    1 None whole turkey (8 lbs)
Preparation
    Heat a nonstick skillet on high heat. Saute bacon for 4-5 mins. Drain on paper towel. Heat oil in same pan. Saute onion and garlic for 4-5 mins until soft. Add wine and cook until almost evaporated. Stir in apricot and currants. Cool.
    Combine breadcrumbs, nuts, bacon, onion mixture, egg and herbs in a large bowl. Season to taste. Preheat the oven to 350\u00b0F.
    Rinse turkey under cold water, pat dry with paper towels. Place on rack in a roasting pan. Spoon stuffing into cavity of turkey and secure with a skewer. Tie legs together and tuck wings underneath. Rub skin with oil and season to taste. Pour 2 cups water into pan. Cover with foil.
    Roast for 1 1/2 hours. Remove foil. Roast for a further 40-45 mins until juices run clear when thickest part of thigh is pierced with a knife. Let stand for 15 mins. Remove stuffing from turkey cavity to serving bowl. Transfer turkey to platter or carving board to slice. Reserve pan juices to make gravy or to serve with turkey.
