Herb-Marinated Pork Steak With Pasta Salad - cooking recipe

Ingredients
    2 cloves garlic, peeled and finely chopped
    1 sprig rosemary, leaves coarsely chopped
    1 stalk thyme, leaves coarsely chopped
    8-9 tbsp olive oil
    4 None pork loin steaks
    250 g penne pasta
    250 g green beans
    150 g pickled roasted peppers, cut into strips
    1 None medium red onion, peeled and cut into strips
    100 ml vegetable stock
    6-8 tbsp white balsamic vinegar
    40 g pine nuts
    1 pack rocket
Preparation
    Mix 3-4 tbsp of olive oil with the garlic and chopped herbs and season. Toss the pork steaks in the marinade, cover and place in the refrigerator. Meanwhile, boil the pasta in salted water according package instructions. Drain and rinse. Next, boil the beans in salted water for about 2 mins. Drain and rinse.
    Pour the stock into a pan with the balsamic vinegar, season, and bring to a boil. Mix the pasta, beans, onion and peppers together in bowl, then pour in the hot stock. Add 5 tbsp of olive oil and mix well, then leave to marinate for an hour. Meanwhile, toast the pine nuts in a dry frying pan, remove and leave to cool.
    To cook the pork steaks, remove them from the marinade, season, and place under a hot broiler for about 8 mins, turning. Meanwhile, toss the toasted pine nuts and the arugula in the pasta salad. Serve each steak on a plate with some pasta salad on the side.
